I just love spring! All the pretty colors popping up, it just make me happy! So the kids and I got out and picked Violets so we could make Violet Jelly! YUM!
Violets grow wild in you yard! They are small little purple flowers with heart shaped leaves! (see the picture of the leaf below) Make sure you are indeed picking actual violets!
After you pick about 2-3 cups of the flowers (flower heads only no stems) place them in a bowl and boil some water. Add 3C boiled water into the flowers and let sit for 8 hours or overnight!
Look at the pretty blue color the water turns!
Strain the flowers out of the water (pushing the extra water out of the flowers) and then put 2C of the violet water into your pan and get ready to make yummy Violet Jelly!
Add 4C sugar and 1/4C of lemon juice Fresh is Best bring it to a full boil. A full boil is when it can not be stirred down. It is so much fun to watch when you add the lemon juice it slowly turns pink!
Once it is to a full boil stir in 3oz (one packet) of liquid pectin and continue to cook for 2 minutes!
Put your jelly into your warm sanitized canning jars leaving 1/4″of headspace. Cover to finger tip tightness with your lid and rim and process in a water bath canner for 10 minutes!
Violet Jelly Recipe
3C boiling water
1/4C lemon juice (fresh is best
3oz liquid pectin
Pour boiling water over flowers and let sit overnight or for at least 8 hours. Strain flowers out (pressing out excess water soaked up by the flowers) and put 2C of the Violet Water into your pan!
Add 4C sugar and mix until dissolved over medium high heat. Add lemon juice and then bring to a full boil where you can not stir the boil down. Add pectin and boil 2 more minutes.
Pour into hot sanitized jars leaving 1/4″ headspace. Place lids and rings to finger tip tightness and process 10 minutes in a water bath canner!
Enjoy! Great with a loaf of fresh baked bread! YUM!
